Baked Potato Skins with Pulled Pork
4 Baker-Style Potatoes
2-3 cups Pulled Pork
4 Tbsp Sweet & Heat BBQ Sauce
2 Tbsp Butter, Melted
2 cups Mozzarella Cheese
Green Onion, Chopped
When ready to cook, start the Z Grill grill on smoke with the lid open until fire is established (4-5 minutes). Set the temperature to 450 degrees F and preheat, lid closed 10-15 minutes.
Rub the potatoes withcanola oil and sprinkle evenly with salt.
Place the potatoes directly on the grill grate and cookfor 45 minutes, or until soft in the middle when pricked with a fork.
Cut the potatoes in half and hollow out, leaving 1/4” inch of potato on the skin.
Brush the inside of the skins with melted butter and place on a baking tray. Put back on grill and cook for 5-6 minutes or until golden brown.
Mix together the pulled pork, Z Grill Sweet ; Heat BBQ Sauce, mozarella and cheddar cheese. Fill the skins with the mixture and put back on the Z Grill with the lid closed, just long enough to melt the cheese.
Garnish with chopped onions, bacon and sour cream. Enjoy!
