INGREDIENTS

3 large EGGS, ROOM TEMPERATURE

3/4 cup HALF & HALF, ROOM TEMPERATURE

3 tbsp UNSALTED BUTTER, MELTED AND SLIGHTLY COOLED, DIVIDED

1/2 cup ALL-PURPOSE FLOUR

2 tbsp CORNSTARCH

1/2 tsp KOSHER SALT

1/2 tsp GROUND PEPPER

1/4 cup CRANBERRIES

1/3 CUP COOKED SWEET POTATOES, DICED

1/2 CUP Leftover SMOKED TURKEY, DICED

PREPARATION

When ready to cook, start the Z Grill grill on Smoke with the lid open until the fire is established (4 to 5 minutes). Set the temperature to 400 degrees F and preheat, lid closed, for 10 to 15 minutes. Place a cast iron skillet directly on the grill grate and let it heat up for 15 minutes.
Place eggs in a food processor and turn on high for about 1 minute. With the motor running, gradually pour in the half and half, then 2 Tbsp butter and mix for another 30 seconds. Add flour, cornstarch, salt and pepper and blend just to combine.
Remove the cast iron skillet from the grill and add 1 Tbsp butter and swirl to coat the bottom of the skillet. Immediately pour the batter into the skillet and place remaining ingredients on the top.
Place skillet directly on the grill grate and bake until puffed and brown around the edges, about 20-25 minutes. Serve immediately. Enjoy!
