Grilled Elk Tenderloin
five to six, 8 oz. Elk Tenderloin Fillets
2 tsp. Garlic, Crushed
1 tsp. Onion
1 tsp. Salt
1 tsp. Black Pepper
1 tsp. Smoked Paprika
Combine all the ingredients together and rub on the tenderloins. Let the tenderloins marinate 10 to 15 minutes. When ready to cook, start the Z Grill on smoke with the lid open until the fire is established (4-5 minutes).
Set the temperature to 450 (high) and preheat, lid closed for 10 to 15 minutes. Place the tenderloins on the grill and cook for 3 to 4 minutes per side for medium rare. Let the meat rest for 5 minutes. Serve.
