Grilled Sticky Ginger Chicken Thighs
1/2 cup grated onion
1/2 cup peanut oil
1/3 cup rice vinegar
2 tbsp water
2 tbsp grated fresh ginger
2 tbsp ketchup
4 tsp soy sauce
2 tsp sugar
2 tsp lemon juice
1/2 tsp minced garlic
Combine all sauce ingredients in a large bowl and set aside.
Place chicken thighs into a zip lock bag and add approximately 3/4 of the dressing to cover. Place in the refrigerator to marinate for at least 1 hour.
When ready to cook, set temperature to High and preheat, lid closed for 15 minutes.
Place marinated chicken thighs on the grill grate, skin side down. Cook for 10 minutes, flip and cook another 10 minutes.
Cut limes and green onions and place on chicken. Cook for an additional 5 minutes. Enjoy!
