Roasted Cod with MeyerLemon Herb Butter
1-1/2 to 2 lbs cod fillets
4 tbsp salted butter, at room temperature
1/2 Meyer lemon, zested and juiced
1 clove garlic, peeled and finely minced
1 tbsp chopped fresh herbs, such as: tarragon, parsley, basil, or chives
2 tsp Salmon Shake
Start the Z Grill on Smoke with the lid open until the fire is established (about 5 minutes).
Preheat grill to 400 degrees F or High, lid closed, for 10 to 15 minutes.
Compound buttter: Combine butter, lemon zest and juice, the garlic, herbs, and the Z Grill Salmon Shake. Refrigerate if not using right away.
Use a tablespoon of the butter to grease a heat-proof baking dish.
Arrange the cod fillets in a single layer in the baking dish. Dot evenly with bits of the compound butter.
Bake for 12 to 15 minutes, or until the fish is cooked through.
Spoon sauce over each serving. Enjoy!
