3 Pound Collard Greens, fresh
12 Slices bacon
2 Medium Sweet onion, finely chopped
3/4 Pound diced ham
6 Clove garlic, chopped
96 Ounce chicken broth
1/3 Cup apple cider vinegar
1 Tablespoon sugar
1 Teaspoon salt
3/4 Teaspoon pepper
When ready to cook, start the Z Grill grill and set the temperature to 185F. Preheat, lid closed, for 10-15 minutes.
Smoke the collard greens for 10 minutes.
Take collard greens off the grill and turn temperature up to 375 degrees F. Place Dutch oven on the grill to pre-heat (about 15 mins).
In the preheated Dutch oven, cook (finely chopped) bacon until almost crisp. Add onions, and sauté 8 minutes.
Add ham and garlic, and sauté 1 minute. Stir in collard greens, broth and remaining ingredients.
Cook 2 1/2 hours or until desired tenderness.
Serve hot, enjoy!
