grilled lemon pepper pork tenderloin
2 lemons, zested
1 Clove garlic, minced
1 Teaspoon freshly minced parsley
1 Teaspoon lemon juice
1/4 Teaspoon black pepper
1/2 Teaspoon kosher salt
2 Tablespoon olive oil
1 (2 lb) pork tenderloin
In a small bowl, whisk together everything except the tenderloin.
Trim all silverskin and excess fat from the tenderloin.
Place pork in a large resealable bag. Pour the marinade over the tenderloin and zip closed. Transfer to the refrigerator and marinate for at least 2 hours but no more than 8.
When ready to cook, set Z Grill temperature to 375˚F and preheat, lid closed for 15 minutes.
Remove the tenderloin from the bag and discard the marinade.
When the grill is hot, place tenderloin directly on the grill grate and cook 15 to 20 minutes, flipping once halfway through until the internal temperature reaches 145˚F.
Remove from the heat and let rest 5 to 10 minutes before slicing. Enjoy!
