roast citrus chicken

INGREDIENTS


  • Pound whole chicken

  • 2 cinnamon stick

  • 1 Pieces fresh ginger

  • 2 Tablespoon butter

  • 1 orange, sliced

  • 1 red onion, sliced

  • 1 Onion, Sliced

  • 5 Clove garlic

  • 3 Sprig thyme sprigs

  • 2 Tablespoon butter

  • To Taste salt

  • To Taste pepper

  • 1 orange zest

PREPARATION

When ready to cook, set the Z Grill to 375℉ and preheat, lid closed for 15 minutes.

Rinse the chicken with cold water, transfer to a sheet pan.

Coarsely crush the dried spices and ginger and combine with half the butter. Spread butter spice mixture under the skin of the chicken.

Slice 1 orange and stuff into chicken along with the red onion, white onion, garlic cloves and thyme.

Rub outside of chicken with remaining butter and season with salt and pepper. Zest second orange over chicken and place chicken directly on the grill grate.

Roast at 375℉ for 1 to 1-1/2 hours or until chicken reaches an internal temperature of 160℉.

Let rest 15 minutes before carving. Enjoy!
