smoked salmon candy
2 Cup gin
1 Cup dark brown sugar
1/2 Cup kosher salt
1 Cup maple syrup
1 Tablespoon black pepper
3 Pound salmon
As Needed vegetable oil
As Needed dark brown sugar
In a large bowl, combine all ingredients for the cure.
Cut the salmon into 2 ounce pieces and place in the cure.
Cover and refrigerate overnight.
When ready to cook, set Z Grill temperature to 180℉ and preheat, lid closed for 15 minutes.
Spray foil with vegetable oil. Place salmon on foil and sprinkle with additional brown sugar.
Place foil directly on the grill grate. Close the lid and smoke the salmon for 3 to 4 hours or until fully cooked.
Serve hot or chilled. Enjoy!
